Ingredients
  

  • 3 ripe bananas (mashed)
  • ½ cup (115 g) unsalted butter, melted
  • ¾ cup (150 g) granulated sugar
  • 1 large egg, beaten
  • 1 tsp vanilla extract
  • 1 ½ cups (190 g) all-purpose flour
  • 1 tsp baking soda
  • Pinch of salt
  • Optional: ½ cup chopped walnuts or chocolate chips

Method
 

  1. Preheat oven to 350 °F (175 °C). Grease a 9×5-inch loaf pan.
  2. In a mixing bowl, combine mashed bananas, melted butter, sugar, beaten egg, and vanilla extract.
  3. In a separate bowl, whisk flour + baking soda + salt.
  4. Gently fold the dry mixture into the wet mixture until just combined (don’t overmix). If using walnuts/choc-chips, fold in.
  5. Pour batter into prepared loaf pan. Bake for ~60 minutes (check at ~55 min) or until a toothpick inserted into center comes out clean or with a few moist crumbs.
  6. Let bread cool in pan for ~10 min, then transfer to a wire rack to cool fully.
  7. Serve: Slice warm or cooled; optionally spread a little butter.
  8. Tip: Using very ripe bananas (lots of brown speckles) gives more banana flavor and sweetness.
