Spicy Chicken Enchiladas
Spicy Chicken Enchiladas are a fiery twist on a classic comfort food. Tender shredded chicken is bathed in a smoky, homemade enchilada sauce and wrapped in soft corn tortillas. Each roll is topped with melted cheese, baked until bubbly, and finished with cool sour cream and fresh cilantro. Every bite delivers the perfect balance of heat, creaminess, and authentic Mexican flavor.

Ingredients
1. 2 cups shredded cooked chicken
2. 1 cup enchilada sauce
3. 1 tsp chili powder
4. ½ tsp cumin
5. 8 corn tortillas
6. 1 cup shredded cheese (cheddar or your choice)
7. ½ cup sour cream (for garnishing)
8. ¼ cup chopped cilantro (optional for garnishing)
Instructions
1. Preheat the oven to 375°F (190°C).
2. In a mixing bowl, combine the shredded chicken, ½ cup of the enchilada sauce, chili powder, and cumin. Mix well.
3. Take each corn tortilla and fill it with a spoonful of the chicken mixture. Roll it up tightly and place it seam-side down in a baking dish.
4. Once all tortillas are filled and placed in the dish, pour the remaining enchilada sauce over the top.
5. Sprinkle the shredded cheese evenly across the enchiladas.
Baking
1. Cover the baking dish with aluminum foil.
2. Bake in the preheated oven for 20 minutes.
3. After 20 minutes, remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden.
Serving
1. Remove from the oven and let it cool for a few minutes.
2. Serve garnished with sour cream, shredded cheese, and chopped cilantro.
